An Effervescent Spring Cocktail

Today we’re taking a closer look at rhubarb, those vibrant ruby stalks that brighten your local farmers’ market stands around early spring.  Or, if you’re lucky, in your home or community garden.

By horticultural standards, it’s considered a vegetable, though by culinary application it takes on a sweeter side, often prepared like a fruit with sugar and aromatic spices. Ingested for thousands of years for medicinal benefits, rhubarb has evolved into what it is today: a key ingredient in desserts, jams and, yes, even beverages.

We have just the cocktail for you to try this spring to make the most of this tart edible while it’s at its freshest – a delicious, refreshing and simple-to-prepare Rhubarb Spritzer Spring Cocktail.

MIXOLOGY TIP: Serve over Marvel Clear Ice for the best clarity, purity and flavor.  

Ingredients

  • 1-1/2 oz. vodka
  • 1 oz. rhubarb simple syrup (see details below)
  • Prosecco (to taste)
  • Marvel Clear Ice
  • Mint or rosemary sprig (optional garnish)
  • 2 stalks chopped rhubarb
  • 1 cup water
  • 1 cup granulated sugar

Instructions

  1. First begin with the rhubarb simple syrup by combining chopped rhubarb with water and sugar in a small saucepan and placing over medium-low heat.
  2. Continue to stir as it cooks until the liquid reaches a syrupy consistency.
  3. Pour through a strainer to remove rhubarb and let cool.
  4. Next, fill a tumbler with Marvel Clear Ice.
  5. Stir in vodka and rhubarb simple syrup and top off with Prosecco.
  6. Garnish with a sprig of mint or rosemary, and enjoy! (MIXOLOGY TIP: To bring out the full flavor and aroma of your garnish, slap it between your hands before placing it in your drink.)
